Meal Prep - Egg and Tuna Salad
A lot of you out there are probably more excited about watching the Super Bowl than worrying about your lunches for the week. But it is Sunday... which means... MEAL PREP DAY! If you read my January review post, you would have read that we went over on our food budget. This means, we have to cut back on our food budget for February... that extra money we spent has to come from somewhere! Because we already have canned tuna in the house, that is what we are using for our lunches for the week. I actually really like my tuna salad recipe, so I am pretty excited about it. JP likes it too but asked that we do half the week with tuna salad and the other half with egg salad. So, that is what we are doing for the week. Team decision, always.
As you know, the average meal out that I have seen is $10-15. We are using an average meal out of $12.50.
Average lunch out: $12.50
Weekdays: 5
Total each week: $62.50
Average for the year: $3,250
Cost of our tuna salad and egg salad sandwiches:
4 Cans of Tuna: $4.00
Dozen Eggs: $1.59
Bacon: $2.99
Bread: $3.99
3 Avocados: $2.61
Goldfish: $1.00
Total: $16.18
Total per person per day: $1.62
Total per person per week: $8.09
Average per year for 1: $420.68
Average difference between eating out and bringing your lunch: $2,829.32.
I have noticed since doing these lunch posts how much we eat avocados. I think they are included almost every week. When you are meal prepping, you could go even cheaper than this. You could buy a jar of peanut butter and a loaf of bread and eat off of that or eat a $1 burger everyday from a quick service restaurant. But I love food and I like to look forward to my lunches each day. When I was a kid I would be eating lunch and talking about what we were going to have for dinner. My mom talks about that to this day. I just love food and if I can eat a great lunch for about $2 a day, I am going to do that every time.
